Emmanuel, I don't think you've forgotten anything, except that for poor -- in the sense of lacking money, not in the sense of being unfortunate -- people like me there are no 75 mm lenses that cover nominal 6x9 or larger. That's why I make do with a humble 80/6.3 Wide Field Ektar and a humbler 65/8 Ilex that is in the same design family as the 65/8 Super Angulon. The Ilex replaced my 65/6.8 Wollensak, functional equivalent of a 65/6.8 Angulon, but a very different design. A small press camera will close on an 80 WF Ektar, also on a 65/6.8 Wollensak or Angulon (they're about the same size), but a small press camera won't go in a pocket, even without roll holder.
Jerome, you're stuck. If you must shoot nominal 6x9, there are no cameras for the format that will accept a lens shorter than normal and fit in a pocket.
Why construct what you can buy? Why not buy a 2x3 Linhof or Graphic and lenses to suit your preferences? Or, for a little more money, a much-modified Graphic XL with focusing mount for the modern lens you like best? See www.skgrimes.com for information on that system.
